Okay, I am not sure about you but I can’t believe that there are only a few days left of February. I know I say this every month, but really this month flew by! March is only a few short days away which means we are one step closer to spring which I am SO ready for. Let’s get this winter over with!
With March comes another holiday – St Patrick’s Day. How do you like to celebrate? I may not be Irish but I’m one of those people who likes to wear green, have some fun themed treats, and perhaps imbibe in a few drinks with friends ;). Life is short and sometimes challenging, so why not have some fun while we can?
One thing that comes to mind a lot around St Patrick’s Day is luck. While I haven’t been lucky in all aspects of my life (I haven’t won the lottery after all), I do have to say I am quite lucky in many ways. I have a family who loves me, and for that I am lucky. I’ve got a wonderful partner in life, my boyfriend Joel, and I am lucky to have someone who loves me exactly for who I am, and knows how to make me smile and laugh even when I am down. I am lucky to have two adorable cats. I have a job in my field of study, and for that I am lucky. I’m lucky because I have an awesome group of friends in my life. I have this blog, and have had the support of those around me, and have found new friends through it as well and I am so lucky for that. And who knows, maybe one day I will get lucky and find that pot of gold at the end of the rainbow ;).
I am ridiculously excited to share this recipe with you! March 17th is only a couple of weeks away now and I’ve already been seeing some fun green treats start to pop up on my social media feeds. If you have been looking for an easy dessert to make to celebrate this fun holiday, look no further!
If you love McDonald’s Shamrock Shakes, you are going to be obsessed with this Baileys Shamrock Shake Cheesecake. It has just the right amount of mint flavour mixed with the delicious taste of Baileys Irish Cream. Finished with whipped cream and a cherry on top, it is reminiscent of the classic St Patty’s Day favourite but in a whole new decadent and delicious way.
I wanted to add Bailey’s to this because its the perfect festive liqueur for this holiday. Irish Cream is just so appropriate to celebrate with after all! Plus, it adds a nice boozy twist to an otherwise quite sweet dessert.
This cheesecake is very easy to make as it requires no baking at all. I wanted to really keep the experience of this cheesecake similar to those delicious shamrock shakes, so this is actually a frozen cheesecake! Once you press the crust into your springform baking pan and pour in the cheesecake filling all you need to do is put it in the freezer for 4 hours (or overnight). Ta Da! You now have a fun, boozy green dessert that even a leprechaun would love.
If you want to make a version of this that you can serve to kids there is an easy swap – simply use an Irish Cream coffee creamer for a similar taste without the alcohol. Or alternatively, you could just completely leave it out (but trust me, the Irish cream flavour is amazing with this.)
I love how festive this Baileys Shamrock Shake Cheesecake is! It really has it all – it’s green, it’s minty and it has Irish cream in it. What more could you want? Baileys Shamrock Shake Cheesecake
Ingredients
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter , melted
- 1/4 cup granulated sugar
For the Cheesecake Filling:
- 16 oz cream cheese (two packages), softened to room temperature
- 1/2 cup granulated sugar
- 1/3 cup Baileys Irish Cream liqueur
- 2 cups Cool Whip (or othe brand whipped topping)
- 1 1/4 tsp peppermint extract
- 25-30 drops green food colouring , or until desired shade of green
Instructions
For the Crust:
- Combine graham crackers and sugar in a medium sized bowl. Stir in melted butter until well combined. Press into the bottom and about 1 inch up the sides of a round 9 inch springform baking pan. Place in freezer until filling is ready.
For the Cheesecake Filling:
- In a large mixing bowl beat together the cream cheese, sugar and Baileys with an electric mixer until smooth. Add in whipped topping, peppermint extract and green food colouring and mix until well combined.
- Spread cheesecake filling over graham cracker crust, Cover with plastic wrap and freeze for at least 4 hours. Remove from freezer approximately 20 minutes prior to serving.
To be honest, I’ve always been too scared to try the McDonald’s Shamrock Shake (half the people I know who’ve tried it love it, half don’t). But this cheesecake looks amazing! This shade of green is one of my favourite colours, and really, you can sign me up for anything that’s got Bailey’s in it! Definitely gonna have to try this for St. Patty’s Day, especially since it’s no-bake 🙂

Hi Anthony. This cheesecake is supposed to be an ice cream like consistency, so I am not certain it would set properly if you just kept it in the refrigerator (I haven’t tested that out myself). It would likely be a lot softer and might be difficult and too soft to cut into and serve properly.
It may depend on how cold your fridge is though! I find the top shelf at the very back of my fridge gets very cold and items I place there get frosty. Perhaps that may work? I cannot guarantee it will turn out though and in my opinion a freezer would be best for optimal results. Good luck!
