Christmas may be over but I still feel in the holiday mood, and luckily New Years Eve is now only a few days away! I hope you have all had a wonderful Christmas, or whatever holiday it may be that you celebrate. Ours involved lots of family time, lots of laughs and of course lots of food!

One of my favourite things about the holidays is all the delicious foods I get to eat, and I’ve probably had more than my fair share of goodies this year. And at least until January, I plan to keep that up. I mean I have like 3 tins of holiday baking sitting on my counter still and someones got to it all all….right?

So the feasting continues and enter this brie. I think i would have a love affair with baked brie if I could. It is my utterly favourite appetizer ever, as well as my most favourite cheese. It just goes so well with so many things, and the way it gets all gooey when melted is just pure heaven. You could definitely say I’m obsessed with brie. My mom likes to joke that if I ever have a daughter I will probably name her after it…

I could take a swim in this stuff. Rich, creamy brie cheese is topped with dried cherries soaked in balsamic vinegar, pistachios, and finished with a drizzle of cinnamon honey. Can you say dreamy?

This baked brie in particular is quite exquisite. Not only is it beautiful but this decadent appetizer only took me all of 15 minutes to prep and just a few ingredients to make.

I served this baked brie when I had some family over for dinner and they absolutely loved it! I couldn’t get enough of it, and am thinking I will be making it for New Years Eve should we have people over. It totally looks festive and the flavours are on point for the season!

Like I said, this recipe is super easy to make. All you need to do is get a wheel of brie, soak some dried cherries in balsamic vinegar for 15 minutes while the oven preheats and you get the cinnamon honey prepped.  You heat the honey in a sauce pan, stir in the cinnamon and then remove from the heat. Next, you top the brie with the cherries pistachios and then bake! Once the brie is soft and starting to ooze, drizzle with honey and the appetizer is done! See? Simple!

There’s no excuse to not make this as it is just too easy, so this is definitely a must have for your New Years Eve party! Or you know, any regular night you want some cheese. 😉

Baked Brie with Balsamic Cherries, Pistachios & Cinnamon Honey

Ingredients

  • 2 tbsp balsamic vinegar
  • 2 tbsp hot water
  • 1/2 cup dried cherries
  • 1/3 cup pistachios , chopped
  • 200 g brie cheese wheel (8 oz)
  • 2 tbsp honey
  • 1/4 tsp cinnamon

Instructions

  • Preheat oven to 350°F.
  • In a small bowl, add balsamic vinegar and hot water to dried cherries. Set aside and allow to soak for 15 minutes.
  • While cherries are soaking, add honey and cinnamon to a small saucepan over medium heat. Mix together and allow to simmer for about 2 minutes, stirring the entire time. Turn off heat and set aside.
  • Either use a brie baker, or line a baking sheet with parchment paper if you do not have a brie baker. Unwrap brie and placed in brie bake or on baking sheet. Drain balsamic soaked cherries and place on top of brie, then top with pistachios. Bake for 15 minutes or until brie has just started to ooze.
  • Transfer brie to a serving platter and drizzle with the cinnamon honey. Serve warm with crackers, crostini or baguette slices.

    Love baked brie! This is a perfect Friday evening snack or even a great appetizer to start supper on Valentine’s Day! Next time I bake brie, I’m definitely trying it with these toppings! The pistachios are a nice touch :). Happy weekend Vanessa!

  3. Is there anything better than creamy baked Brie? I love that you soaked the cherries in balsamic vinegar. That sounds amazing! And the cinnamon and pistachios…it just all sounds so yummy

    I was never a huge fan of brie for some reason. I love super stinky cheese though…weird isn’t it? My wife loves brie though and will eat the whole wheel by herself haha! I’l have to make this for Valentines for her!
